Théo Dancer Bourgogne Aligoté 1.5L MAGNUM 2024

Théo Dancer Bourgogne Aligoté is made from an organically farmed plot of old-vine Aligoté in Meursault, bottled here in 1.5-litre magnum.

Théo Dancer runs a micro-négoce alongside the family domaine, buying tiny quantities of fruit from four vineyards across France. The project gives him the chance to work with growers he admires and with varieties he does not have at the domaine. From 2022 he has taken fruit from a plot of organic old-vine Aligoté in Meursault, a variety once widely planted across the Côte and now enjoying renewed attention as the climate warms. The wine is made in the same way as the Vincent Dancer whites: fermented naturally with all its lees, no bâtonnage, matured in large-format barrels over winter and then rested in vat, racked only once and bottled unfiltered. The result has the chalky drive of the variety along with unusual generosity of fruit.

Drink over the next five years with oysters, charcuterie or a gougère; the magnum format will hold longer. Serve at 10-12°C.
