Théo Dancer Bourgogne Aligoté 2024

This is Aligoté from a plot of organically farmed old vines in Meursault, made by Théo Dancer under his own micro-négoce label.

Théo Dancer works alongside the family domaine at Chassagne-Montrachet and has built a small négoce buying tiny quantities of fruit from four vineyards around France. The project matters to him for two reasons: it lets him work with other good growers, and it gives him varieties he does not have in the domaine's own rows. Aligoté is Burgundy's second white grape, long treated as an also-ran but increasingly taken seriously where the vines are old and the site is good. From 2022 Dancer has worked with this organic old-vine parcel in Meursault, and the quality has risen sharply. The wine is made exactly as the Vincent Dancer whites are: natural fermentation with all its lees, no stirring, maturation in large-format barrels over winter, then a rest in vat, racked once and bottled unfiltered.

Drink over the next four or five years. Serve at 10 to 12°C with oysters, a green salad with soft cheese, or fried whitebait.
