Théo Dancer Vin de France Botanica Gamay, in magnum, is a fully destemmed Chiroubles Gamay raised in amphora and old cask.
Dancer's micro-négoce buys small quantities from four vineyards around France, letting him work with growers he rates and with varieties he does not farm at the domaine. The Gamay comes from an organic grower in Chiroubles, the highest and most delicate of the Beaujolais crus, where pink granite soils give perfumed, light-framed wine. The winemaking follows previous releases: the grapes are fully destemmed and the wine ferments and matures in amphora and old cask, with no carbonic maceration at any point. Benoît Moreau, another Burgundian working in Beaujolais, takes a similar non-carbonic approach to Chiroubles, on the reasoning that a longer, Pinot-like fermentation lets the site come through more clearly. The result here is a Gamay of unusual purity and aromatic detail. This is the magnum bottling.
Drink over the next four or five years, lightly chilled, with charcuterie, roast chicken or grilled salmon. Serve at 14-16°C.
