Théo Dancer Vin de France Botanica Gamay is sourced from an organic grower in Chiroubles and fermented without carbonic maceration.
Botanica is part of Théo Dancer's micro-négoce, a small side project to the family domaine through which he buys fruit from four vineyards across France and works with varieties he does not grow himself. The Gamay comes from an organic grower in Chiroubles, the highest of the Beaujolais crus, on granite soils at over 400 metres. The method is unchanged from previous releases: the grapes are fully destemmed and the wine is fermented and matured in amphora and old cask. It is worth noting that Benoît Moreau, another Burgundian working in the same commune, uses a similar non-carbonic approach, on the view that a longer, Pinot-like fermentation lets the site speak more clearly. The wine is labelled Vin de France rather than under the cru.
Drink over the next four years, lightly chilled, with charcuterie, roast chicken or grilled vegetables. Serve at 14-16°C.
