Théo Dancer Vin de France Jurassique Savagnin 1.5L MAGNUM 2023

Théo Dancer Vin de France Jurassique Savagnin is raised ouillé, with the barrels kept topped up so no flor forms, and is offered here in 1.5-litre magnum.

The fruit comes from a conscientious farmer at Rotalier in the southern Jura, the village that is also home to Ganevat and Julien Labet. The vines grow on chalky clay over Bajocian limestone subsoil, geologically of a piece with the ground Dancer works in Burgundy. Savagnin here is usually aged under a veil of yeast to produce the oxidative, nutty style the region built its name on; Dancer wants purity and terroir instead, so the fruit is pressed straight to large oak barrels, left unracked until fermentation completes, and topped up throughout maturation. The result, bottled as Vin de France, is a Burgundian grower’s take on the Jura: citrusy and tightly wound with a little powdery grip, and considerable drive, length and finesse.

Magnums slow things down, so allow up to a decade; serve it not too cold and decant when young. Serve at 10-12°C with roast poultry, comté tart or freshwater fish.
