Théo Dancer Vin de France Jurassique Savagnin, in magnum, is a topped-up Jura Savagnin from a single grower in Rotalier.
Alongside the family domaine, Théo Dancer runs a small négoce buying fruit from four vineyards across France, which lets him work with growers he rates and with grapes he does not have at home. This Savagnin comes from Rotalier in the southern Jura, the village of Ganevat and Julien Labet, where the vines sit on chalky clay over Bajocian limestone subsoil. Rather than the traditional oxidative treatment under a veil of flor, Dancer works ouillé, keeping the barrels topped up so the wine keeps its direct, mineral character. The fruit is pressed straight to large oak barrels with no racking until fermentation has finished, and the barrels stay full through élevage. The wine is citrusy and tightly coiled with a powdery grip, and the magnum format will slow its development further.
Serve cool rather than cold and decant if young, with Comté, roast poultry or freshwater fish. Serve at 10-12°C.
