Description
Theo Dancer Jurassique Savagnin is a topped-up, oxidation-free Savagnin from the fossil-rich marls of L'Étoile in the Jura.
Savagnin is the Jura's signature white variety and is best known for wines aged under a veil of flor, which gives the nutty, sherry-like character many drinkers associate with the region. This bottling takes the other route: it is Savagnin ouillé, meaning the barrels are topped up throughout ageing so no veil forms and the wine speaks of fruit and site rather than flor. The fruit comes from the marl soils of L'Étoile, a small appellation in the south-west of the Jura whose soils are dense with tiny star-shaped crinoid fossils. The grapes were pressed and put straight into large oak barrels, with no elaborate intervention afterwards. The wine is labelled Vin de France, and it reads as a Burgundy grower's take on Jura rather than a traditional one.
Drink over the next four to six years. Serve at 10-12°C with roast chicken, comté or a mushroom and tarragon tart.
