Théo Dancer Vin de France Jurassique Savagnin 2022

Théo Dancer Jurassique is a topped-up, oxidative-free Savagnin from Rotalier in the southern Jura, made by a Burgundy grower.

Savagnin is the Jura’s signature white grape, most often aged under a veil of flor to give the sous voile style, but it can also be raised ouillé, with the barrels kept topped up, which puts the site and the fruit rather than the flor character at the centre of the wine. Dancer sources his Savagnin from a conscientious farmer in Rotalier, the same southern Jura commune as Ganevat and Julien Labet, where the vines sit on chalky clay over Bajocian limestone subsoil. The winemaking is straightforward and aimed at purity: the fruit is direct-pressed into large oak barrels, with no racking until fermentation has finished, followed by a settling period in stainless steel before bottling. The result is a racy, low-pH wine with good texture, drive and length.

Ready to drink and likely to hold for five years or so. Serve at 10-12°C with roast chicken, trout with almonds or a young comté.
