Description
Thibaud Boudignon Anjou is a dry Chenin Blanc grown on the dark schist of the Anjou Noir, bottled here in magnum.
Thibaud Boudignon works a small holding of Chenin Blanc on the schist soils of the Anjou Noir, around Saint Aubin de Luigne and Savennieres, and set up on his own account after working elsewhere in the region. Farming is done by hand at low yields, with the fruit picked in successive passes as each parcel ripens. Pressing is slow and gentle, fermentation runs with indigenous yeast in barrel, and the wines are left on their fine lees for an extended period with minimal handling and restrained sulphur before bottling. The Anjou blanc is the introductory cuvee of the range, drawn from the estate's younger parcels.
Dry, saline and more mineral than fruity, it suits scallops, roast white fish, poultry and fresh goat cheese; serve at 11 to 12 degrees.
