Thibaud Boudignon Savennières Clos de Frémine 2023

Thibaud Boudignon Savennières Clos de Frémine is a dry single-clos Chenin Blanc from one of the appellation's walled parcels.

Savennières is a small appellation on the right bank of the Loire just west of Angers, barely a hundred and fifty hectares, planted only to Chenin Blanc on steep south-facing slopes of dark schist, sandstone and volcanic debris. The aspect and the river together give warm days and cool nights, so the grapes ripen fully while holding the acidity that lets these wines age for decades. Thibaud Boudignon farms his parcels here organically, ploughing rather than spraying, working the vines by hand and picking in several passes. The fruit is pressed in whole bunches, fermented with indigenous yeasts and raised on fine lees in barrel for an extended élevage before being bottled dry and unfiltered.

Dense and dry with real cut, it deserves decanting and suits scallops, roast poultry and aged hard cheese; serve at around 12 degrees.
