Description
Thibaud Boudignon Savennières Clos de la Hutte is a dry Chenin Blanc from a walled parcel that has become the reference point of the estate.
Savennières is one of the smallest serious white wine appellations in France, a run of steep, south-facing slope above the Loire planted entirely to Chenin Blanc on schist, sandstone and volcanic rock. The Clos de la Hutte is a walled parcel within it, and Thibaud Boudignon has built much of his reputation on it since taking the vineyard in hand. The farming is organic and heavily manual, with ploughing between the rows, close pruning and picking in several passes so that only ripe, sound fruit is used. The grapes are pressed in whole bunches, fermented with indigenous yeasts and given a long ageing on fine lees in barrel before an unfiltered, bone-dry bottling.
Powerful and dry with a stony core, it wants decanting and suits lobster, roast bresse chicken or aged Comté; serve at around 12 degrees.
