Thibaud Boudignon Savennières La Vigne Cendrées 2023

Thibaud Boudignon Savennières La Vigne Cendrées is a dry single-parcel Chenin Blanc made in very small quantity.

The Savennières vineyards run along a ridge above the Loire west of Angers, on schist, sandstone and old volcanic material that give thin, free-draining soils and naturally small crops. Chenin Blanc is the only grape permitted, and the combination of southern exposure and river-cooled nights produces dry wines of unusual structure and longevity. Thibaud Boudignon works his parcels here organically, with ploughing, hand pruning and picking in successive passes to bring in fully ripe but clean fruit. Vinification is the same across his range and deliberately plain: whole bunches to the press, fermentation with indigenous yeasts, then months on fine lees in barrel before an unfiltered bottling, so the differences between sites are what shows.

A firm, dry and mineral Savennières for cellaring or for rich seafood and poultry dishes; serve at around 12 degrees.
