Thomas Wines Elevage Semillon 500ml is a sweet Semillon from the Hunter Valley, sold in 500ml.

Braemore was planted in 1969, and those old vines supply the bulk of the fruit here. Only the lightest pressings are used, which keeps the wine delicate despite the sugar. A long, cool ferment was stopped at roughly 10 per cent alcohol, leaving about 145 grams per litre of residual sugar, and the wine saw nothing but stainless steel, with no barrel and no lees work to blur the fruit. This is the fourth release of the style, built for drinking young while the citrus is still bright. Sweet Hunter Semillon is a rarity, and the region's acidity is what makes it work.

Sweet and thick, with lime marmalade, blossom and honey over a firm acid spine. Chill it well, 7 to 8 degrees, and pour small measures. Roquefort or a washed-rind cheese works, as does a plate of fresh figs and almonds.
