Thomas Wines Fordwich Hill Semillon is an unoaked single-site Semillon from the Lower Hunter.

Rainfall on the western fringe of the Lower Hunter runs slightly below what the rest of the valley gets, and that dry edge shows in the concentration. Soil is the other difference: deep red volcanic dirt shot through with ironstone, where Andrew Thomas usually looks for lighter ground when choosing Semillon blocks. Longer hangtime again, then a straightforward stainless steel ferment and a few weeks on lees. Thomas has worked this site long enough to know exactly what he wants from it, and the wine has been made the same unfussy way for years: no oak, no malolactic, nothing borrowed.

Star-bright in the glass, juicy and citrus-driven, with real mineral depth under the fleshy middle. Ten degrees is about right. Try it with fish and chips, a fresh goat's curd salad, or Vietnamese rice paper rolls.
