Thomas Wines Synergy Semillon 2025

Thomas Wines Synergy Semillon is a Hunter Valley Semillon drawn from three old-vine blocks.

Braemore supplies about seventy per cent of the 2025, with Oakey Creek and Fordwich Hill making up the difference: three old-vine sites Andrew Thomas has worked for years, each of which also stands alone under its own label. What comes here is the material that did not go into those, which is a generous definition of a second wine. Fermentation took place in stainless tanks, without oak or malolactic, and the wine was bottled early. Thomas came to the Hunter from McLaren Vale and has been making Semillon under his own name since 1997.

Lemongrass and ripe lime over pure citrus, honeydew through the middle, then a taut, clear-cut finish. Serve it at 9 degrees. Grilled snapper, scallops or a plate of prawns with lemon are the easy calls.
