Thomas Wines The O.C. Semillon is a taut single-site Semillon from the Hunter Valley.

Low yields are the defining fact of this Pokolbin block, a shallow strip of sandy loam along Oakey Creek Road that never gives much fruit. Andrew Thomas once made a fuller, riper Semillon from it and changed his mind, deciding the site belonged in the classic Hunter camp: picked early, fermented cool in stainless steel, bottled without oak and without malolactic. He calls it the most precise wine in his range, and the least interfered with. Thirty years of Hunter vintages sit behind that restraint, and the wine is better for the things left out.

Waves of tangy citrus, lemongrass and a hint of dried ginger over wet river stone, finishing long and dry. Chill it well, 8 to 9 degrees. Sashimi, oysters or a green papaya salad all suit; a decade in the cellar suits it better still.
