Tonic Wines Adelaide Hills Chardonnay is a fine, modern Australian Chardonnay built on freshness and line.

Tonic Wines is the small label of owner and winemaker Glenn Barry, who works with South Australian vineyards and makes wines with savoury drive and texture. For 2025 he describes a move to a finer, more delicate Chardonnay without giving up flavour. The cool Adelaide Hills, with its elevation and long, mild ripening season, suits the approach. A firm line of acidity carries crisp stone fruit and green apple, with white florals and a saline, mineral close. At 12.8 per cent alcohol it is restrained, savoury and well balanced.

Serve chilled, at around 8 to 10 degrees. Try it with grilled whiting, scallops, chicken schnitzel or a crunchy fennel and apple salad, and enjoy it over the next few years.
