Tonic Wines Mataro 2021

Tonic Wines Mataro is a savoury, firmly structured red and a return to the grape where the Tonic story began.

Winemaker Glenn Barry calls Mataro the variety that started it all for Tonic, and the one that best sums up what he looks for in a red: red to purple fruit, a gamey, savoury edge and firm tannin, with real charm. Grapes are hand-picked and fermented with a portion of whole bunches for perfume and savoury complexity, following the same approach as the Tonic Grenache. After fermentation the wine is left largely alone in old barriques and puncheons, topped up regularly, then racked and sulphured just before bottling. Barry rates Mataro as the star variety of the Barossa Valley.

Give it a short decant and serve at around 16 to 18 degrees. Lamb shoulder with rosemary, braised game, charcuterie or a hearty cassoulet all suit its savoury side, and it has the structure to age for several more years.
