Toolangi Pauls Lane Pinot Noir 2018

Toolangi Pauls Lane Pinot Noir is a single-vineyard Yarra Valley Pinot Noir from Dixons Creek.

Rows 46 to 66 of E Block, planted to MV6 in 2001, are the source, a defined strip of the eleven-hectare Dixons Creek property that runs up against the Toolangi State Forest. Half the bunches went in whole, the rest destemmed, and fermentation started on its own in open-topped wooden vats. Twenty-three days on skins is a long soak for Pinot, and it shows in the texture. Pressing went to French oak, a fifth of it new, for eight months, and the wine was bottled without fining or filtration. The site has been planted since 1995 and crops lightly by nature.

Rose petal, plum and earth over fleshy fruit, with powdery tannin and a long sour-cherry finish. Serve at 14 to 15 degrees, cooler than you might think. Duck, roast pork or mushrooms with butter and parsley all work, and a Burgundy glass helps.
