Toolangi Vineyard E Block Pinot Noir 2021

Toolangi Vineyard E Block Pinot Noir is a Yarra Valley Pinot made only in the better seasons from ten rows of old vines.

Ten rows of twenty-year-old MV6 vines, farmed harder than the rest of the property: tighter pruning, closer canopy management, more cultivation between the rows to keep the soil healthy and holding moisture. They yield one and a half to two tonnes in a good year, and the wine is only made when the season warrants it. The rows continue east from the Paul's Lane parcel, and Kaspar Hermann is convinced something in the subsoil changes along the way. Fifty per cent whole bunches went into the ferment, and maturation ran nine months in French oak with a quarter new.

Layers of spice and earth over a full, silky palate, chalky tannin and a snappy, mineral-flecked close. Decant it, serve at 14 degrees in a large glass. Duck breast, mushroom pappardelle or a hard alpine cheese; it will evolve for a decade.
