Toolangi Vineyard Pauls Lane Chardonnay 2025

Toolangi Vineyard Pauls Lane Chardonnay is a Yarra Valley Chardonnay from a single parcel of original-planting vines.

Harvest came early in 2025, on 15 February for this parcel, which is early even by warm-vintage standards. The fruit was crushed, destemmed and pressed to French oak with ten per cent new barrels, then left nine months on lees. Malolactic conversion is skipped here by design: the I10V3 clone planted in 1995 in these twenty rows of D Block reaches ripeness with its acidity intact, and Kaspar Hermann sees no reason to soften it. The property sits on fine clay loam in Dixons Creek, sheltered, low-cropping and bordered by the Toolangi State Forest.

Citrus and stone fruit, bright acidity, subtle spice and a saline thread running through a long finish. Serve at 12 degrees. Grilled fish, chicken with lemon and herbs, or a soft washed-rind cheese will all suit it nicely.
