Toolangi Vineyard Pinot Noir 2025

Toolangi Vineyard Pinot Noir is a Yarra Valley Pinot Noir made from MV6 vines on a single estate site.

The recipe has settled: pick across two days late in March, destem most of the fruit, ferment as whole berries with ten per cent bunches, fourteen days on skins, nine months in oak with a tenth new. Repetition here is a sign of confidence, not habit, since eight vintages have given Kaspar Hermann a clear reading of what these twenty-two-year-old vines want. The site sits on fine clay loam in Dixons Creek, eleven hectares against the Toolangi State Forest, and crops lightly enough to give concentration without heavy extraction.

Pure red fruit with spice and a fine savoury line, elegant and fresh through a long finish. Serve at 14 degrees. Salmon, roast chicken or a mushroom tart; there is no need to wait, though it will keep.
