Toolangi Vineyard Shiraz 2024

Toolangi Vineyard Shiraz is a Yarra Valley Shiraz fermented as whole berries and matured in old oak and foudre.

Handpicked on 20 March, this was destemmed to whole berries with no bunches at all, then fermented on skins for twenty-one days in an open-top vat. Pressing went to aged French barriques and a foudre, where malolactic conversion happened and the wine spent ten months before bottling. Seasoned oak only, because the fruit off these PT23 blocks brings its own spice and Kaspar Hermann has no interest in covering it. Eight years at the property have given him a clear picture of what the Dixons Creek site can do with Syrah.

Savoury and peppery, dark berry fruit with a sinewy tannin frame and cool-climate acidity. Serve at 16 degrees. Roast lamb, beef ribs or a mushroom and lentil stew; give it twenty minutes open before pouring.
