Description
Toro Albalá Amontillado Convento Selección is a 1952 Amontillado from Montilla-Moriles, held in cask at Aguilar de la Frontera for more than seventy years.
Everything about this wine is unusual. Montilla-Moriles sits inland of Jerez, south of Córdoba, and the base grape there is Pedro Ximénez rather than Palomino — so an Amontillado from this DO starts life from a different variety than a Jerez wine of the same name. The style itself is a two-stage affair: a period under the veil of flor, then decades of oxidative ageing once that veil dies away, which is where the nutty, saline, deeply savoury register comes from. Toro Albalá bottles these as single-harvest museum wines instead of blending them into a solera, and the Convento Selección tier is kept for the oldest and scarcest casks in the bodega. Seven decades of slow evaporation leave very little liquid and a great deal of concentration.
Pour it in small measures at 13 to 14°C, as an aperitif with almonds or jamón, or alongside a clear broth. An opened bottle is in no hurry and will hold for months at cellar temperature.
