Description
Toro Albalá Don PX 375ml is a vintage-dated sweet Pedro Ximénez from Montilla-Moriles in southern Spain.
Each vintage at this bodega in Aguilar de la Frontera is kept apart from harvest through to bottling, so no two releases taste alike. The base is Pedro Ximénez laid out on mats to dry under the Andalucían sun, the asoleo, until it takes roughly three kilos of raisined fruit to yield a single litre of juice. After pressing, the must is fortified to nine per cent and settles in stainless steel for a year, then fortified again to seventeen and moved into American oak butts for at least two decades. Montilla-Moriles is warmer and further inland than Jerez, which is why its PX sets the standard.
Ripe dates, maple, cinnamon and dark brown sugar, thick in the glass but cut clean by acidity. Serve it cool, around 12 degrees, in a small glass. Pour it over vanilla ice cream, or sit it beside blue cheese, walnuts or a flourless chocolate cake.
