Toro Albala Don PX Convento Seleccion 1946

Toro Albala Don PX Convento Seleccion is a vintage-dated Pedro Ximénez drawn from the oldest and rarest casks in the Toro Albalá cellars.

Montilla-Moriles lies inland from Córdoba, hotter and drier than Jerez, and Pedro Ximénez ripens so completely there that the grapes are sun-dried on mats before pressing. The resulting must is thick enough that fermentation barely begins, and the wines reach their final strength with little or no fortification. Toro Albalá has worked from Aguilar de la Frontera since 1922, and its museum releases are vintage-dated bottlings rather than solera blends, drawn from casks that have sat in the cellars for decades while evaporation concentrated them further. The Convento Selección bottlings were vinified by the first two generations of the family and represent the very finest selections from the estate's inventory, a tier above the Selección wines made by the second generation and by Antonio Sánchez Romero, the third generation and current head of the estate. Wines of this age are far more savoury and complex than the younger blended PX most drinkers know.

Only small measures are needed, and an opened bottle will keep for months at cellar temperature. Serve at 12-14°C with chocolate and coffee desserts, or over vanilla ice cream.
