Toro Albalá Poley Cream 10 Años 500ml NV

Toro Albalá Poley Cream 10 Años is an old Oloroso sweetened with aged Don PX, sold in half-litre format.

Montilla-Moriles makes the same family of wines as Jerez, but from Pedro Ximénez rather than Palomino, and in a climate hot enough that most of them reach full strength without fortification. Toro Albalá has worked from Aguilar de la Frontera since 1922. Cream is the sweetened style that gave sherry much of its old reputation, and this is a more serious reading of it than that history suggests: the base is a 10-year-old Oloroso Viejo, aged oxidatively in cask, which is then enriched with old Don PX and a small measure of Fino Lagar. The PX supplies the sweetness and the Oloroso the structure and salinity, and the ten years in wood give a velvety texture that the commercial versions of this style rarely have.

Ready now and stable for weeks once opened, it works with almond desserts, coffee and petits fours, or a wedge of Stilton. Serve at 12-14°C.
