Toro Albalá Poley Fino del Lagar 10 Años 500ml NV

Toro Albalá Poley Fino del Lagar 10 Años is an unfortified fino from Montilla-Moriles, made entirely from Pedro Ximénez.

Montilla-Moriles lies inland from Jerez in the province of Córdoba, on the chalky white albariza soils the two regions share, and it works the same solera system for biologically aged wines. The differences are the grape and the strength: where Jerez uses Palomino and fortifies, Montilla's fino is built on Pedro Ximénez, which ripens so readily here that the wine reaches around 14.5 per cent alcohol by fermentation alone. This bottling, drawn from Toro Albalá's Eléctrico solera and averaging ten years of ageing, is therefore unfortified, its alcohol entirely its own. It develops under flor, the veil of yeast that shields the wine from oxygen and gives fino its character, and the criaderas are worked in the usual fractional way. Pedro Ximénez lends more weight through the middle than a Jerezano fino usually shows, while the chalk keeps the finish taut.

Serve well chilled at 8-10°C in a decent-sized glass, and treat an open bottle as you would a white wine; it suits jamón, salted almonds, anchovies and fried fish.
