Description
Torres Salmos is the Torres family's wine from Priorat, the steep slate amphitheatre inland from Tarragona and one of only two DOQ appellations in Spain.
Priorat takes its name from the Carthusian priory of Scala Dei, founded in the twelfth century, whose monks are credited with establishing viticulture in these hills; Salmos, meaning psalms, nods to that monastic past. The vineyards sit on llicorella, a friable black slate that forces vines deep in search of water and is the single greatest influence on the character of the region's wines. Old Cariñena and Garnacha form the backbone, with Syrah completing the blend. The slopes are steep enough that much of the work is done by hand, yields are naturally very small, and the wine is matured in French oak.
Substantial enough for slow cooked lamb, oxtail or hard sheep's milk cheeses; decant, serve at around 18°C, and cellar with confidence for a decade.
