Description

Torrevento Infinitum Verdeca Puglia IGT is a native southern Italian white from the hills north of Bari in Puglia. Verdeca is an indigenous variety closely associated with this part of southern Italy, and here the vineyards sit at 300 to 400 metres above sea level, where elevation brings an important element of freshness to Puglia’s otherwise warm Mediterranean growing conditions.

The vines are planted on clay-limestone soils and trained using the cordon system. Harvest takes place in early September, followed by gentle pressing and temperature-controlled fermentation. The wine is made and matured entirely in stainless steel, a deliberately straightforward approach that preserves Verdeca’s natural freshness and allows the grape and its Puglian origins to remain at the centre of the wine.

Serve well chilled at around 8 to 10 degrees with seafood, grilled fish, fresh cheeses, antipasti or simple Mediterranean dishes.

Winery

Torrevento is a historic Puglian winery based near Castel del Monte, in the limestone hills north of Bari. The estate works with both native and international grape varieties, with a strong emphasis on preserving the identity of southern Italy through wines that are approachable, regional and expressive.

Infinitum Verdeca highlights one of Puglia’s lesser-known indigenous white grapes. Grown at moderate altitude on clay-limestone soils and vinified entirely in stainless steel, it reflects Torrevento’s straightforward approach to winemaking: allowing the grape variety, freshness and Mediterranean character of the region to remain at the centre of the wine.

Recipe

Fave e Cicorie (Puglian Broad Bean Purée with Chicory)

Ingredients:

  • 300g dried split broad beans, soaked overnight
  • 500g chicory or dandelion greens
  • 1 small potato, peeled and chopped
  • 4 tbsp extra virgin olive oil
  • 1 garlic clove
  • Salt and cracked black pepper
  • Crusty bread, to serve

Instructions:

  1. Drain the soaked broad beans and place them in a saucepan with the potato. Cover with fresh water and simmer gently for 45–60 minutes until very soft.
  2. Drain any excess water, then mash the broad beans and potato until smooth and creamy. Stir through two tablespoons of olive oil and season with salt and pepper.
  3. Bring a separate saucepan of salted water to the boil and cook the chicory until tender, then drain well.
  4. Heat the remaining olive oil in a frying pan, add the garlic and cook gently until fragrant.
  5. Add the cooked chicory and toss for a few minutes until coated in the garlic-infused olive oil.
  6. Spoon the warm broad bean purée onto plates and top with the chicory. Finish with a generous drizzle of extra virgin olive oil and serve with crusty bread.
