Transcaribbean Rum Line Flying King

Transcaribbean Rum Line Flying King is a blended Caribbean rum drawn from Jamaican and Dominican stocks.

Forty per cent of the blend comes from Trelawny Parish in Jamaica, where a long wild fermentation builds the esters that give Jamaican rum its funk, distilled in copper double-retort pot stills. The rest is Dominican, column-distilled in the Spanish style, which is rounder and fills the mouth more, sitting underneath the Jamaican character without fighting it. Both components are molasses-based and the blend was aged tropically for three years before bottling. Tropical ageing works faster and takes more out of the barrel than the same span of time in a European warehouse.

Oak leads, then musk lollies, crème brûlée and cake spice over delicate tropical fruit, the palate full and buttery with a macadamia finish. Sip it neat at room temperature, or over one large ice cube. It also makes a serious Mai Tai, where the Jamaican esters carry through the lime.
