Transcontinental Rum Line Fiji 2014

Transcontinental Rum Line Fiji 2014 is a pure single pot still rum from the South Pacific Distillery.

Established on Fiji in 1979, the distillery draws on cane grown in rich volcanic soil and farmed organically, still cut by hand on its own plantation, and hand-cutting gives a cleaner juice with fewer tannins than machine harvesting. Distillation was in pot stills from fermented molasses. This batch spent a little over two years maturing in the islands, where heat and humidity accelerate everything, before being finished for more than a year in Europe at a gentler pace. Fresh and fruity with a distinct island character, pineapple and banana over a dry, faintly grassy finish. Serve neat at room temperature, or long with soda and lime on a hot afternoon. It makes an excellent daiquiri if you want the pot still character to show through.
