Trimbach Gewurztraminer SGN Hors Choix 2007

Trimbach Gewurztraminer Sélection de Grains Nobles Hors Choix is the family's rarest sweet wine, made from nobly rotten fruit picked berry by berry.

The Sélection de Grains Nobles category requires musts of extreme concentration and permits no enrichment, so the wine can only be made when autumn conditions around Ribeauvillé allow botrytis to develop cleanly on Gewurztraminer. Pickers pass repeatedly through the parcels taking only shrivelled berries, and the resulting juice ferments for months in stainless steel before halting naturally. Hors Choix marks the small number of lots the family sets aside as the finest, and these bottles rest in the cellars at Ribeauvillé for many years before release. The wine carries 124 grams per litre of residual sugar, and no oak is used at any stage.

Very sweet, dense and slow to unwind, it suits foie gras, blue cheeses and dried-fruit desserts, or is best drunk on its own; serve at 8 to 10 degrees.
