Trimbach Gewurztraminer Vendanges Tardives is a late-harvest Alsace sweet wine made only when the fruit reaches the legally required must weight.
Vendanges Tardives is a controlled category in Alsace, restricted to the four noble grapes and to musts that reach a minimum sugar level fixed by law, with chaptalisation forbidden and the wine held back from release for a period after harvest. Trimbach picks these grapes several weeks after the classic cuvées, taking advantage of dry autumn conditions in the rain shadow of the Vosges to concentrate the fruit on the vine, with or without botrytis depending on the season. Fermentation takes place slowly in stainless steel and is stopped naturally, leaving 61.2 grams per litre of residual sugar, and no oak is used at any stage.
Sweet but firmly framed rather than unctuous, it suits foie gras, blue cheese and fruit tarts, or a glass on its own; serve at 8 to 10 degrees.
