Trimbach Gewurztraminer Vendanges Tardives is a late harvested Alsace Gewurztraminer from a house better known for its bone dry style.
Trimbach has been at Ribeauville since 1626 and is now in its thirteenth generation, a house whose reputation rests on precision and restraint rather than opulence, and which declares a Vendanges Tardives only in vintages that genuinely allow one. The category is tightly defined in Alsace: minimum must weights are high, chaptalisation is forbidden, and each wine must be submitted for tasting before it can be released. Fruit comes from the limestone and marl slopes around Ribeauville and Bergheim, hand picked well after the main harvest and pressed slowly, then fermented in neutral tank so that nothing obscures the variety. The wine settles at around 64 grams per litre of residual sugar.
Restrained for the style, with the house's characteristic cut, it suits foie gras, Munster and blue cheese; serve well chilled at 8 to 10 degrees.
