Valdespino Contrabandista Amontillado Sherry Gift Box NV

Valdespino Contrabandista Amontillado Sherry Gift Box is a medium style Amontillado from Jerez, from one of the oldest houses in the sherry trade.

An Amontillado begins life as a fino, ageing under the layer of flor yeast that grows on the surface of the wine in cask; when the flor dies away, the wine is left in contact with air and continues to mature oxidatively, and it is that double life that separates it from both fino and oloroso. Valdespino has been in Jerez since the fifteenth century by its own account and is one of the few houses to have kept the slower, older ways of working, including patient ageing through the solera, in which wine is drawn from the oldest scale of casks and replaced from younger ones so that no single year stands alone. Contrabandista is finished with a measure of Pedro Ximénez, which brings it into the medium category.

Serve lightly chilled, at 12 to 14°C, with cured ham, almonds, hard cheese or mushroom dishes; presented here in a gift box.
