Valdespino Inocente Fino 375mL NV

Valdespino Inocente Fino is one of the very few single vineyard sherries made, and one of the last finos still fermented in cask.

The wine comes from Macharnudo Alto, a high pago north of Jerez whose chalk white albariza soils are among the most highly rated in the region, and the Palomino Fino is grown there rather than blended from across the zone. Valdespino, a Jerez house whose origins are traditionally traced to the fifteenth century, ferments Inocente in old oak butts rather than stainless steel, a practice almost every other bodega abandoned decades ago, then ages it biologically under flor through a long solera. The flor consumes oxygen and alcohol in the cask and shields the wine from air, which is what keeps a fino pale and dry, and it must be fed by regular refreshment from younger casks to stay alive.

Serve properly cold, at 7 to 9°C, in a white wine glass with olives, almonds, jamón or fried fish, and treat an opened bottle like a fresh white and finish it within a few days.
