Valdespino VOS Medium Oloroso Solera 500mL NV

Valdespino VOS Medium Oloroso Solera is an aged, lightly sweetened oloroso from Jerez carrying one of the region's certified age designations.

VOS stands for Vinum Optimum Signatum, a category the Consejo Regulador awards only to sherries whose average age has been verified at more than twenty years; the tasting panels and laboratory analysis involved mean relatively few wines carry it. An oloroso is fortified high enough that the flor yeast never forms, so it spends its whole life in contact with air and concentrates slowly in cask as water evaporates through the wood. A medium oloroso is one adjusted before bottling with a measure of sweet wine, usually Pedro Ximénez. Valdespino is among the oldest houses in Jerez and holds some of the region's deepest reserves of very old soleras.

Serve at 13 to 14°C in a small glass with game, oxtail, aged cheese or roasted nuts; and it will keep for some weeks once opened.
