Vasse Felix Sauvignon Blanc 2023

Vasse Felix Sauvignon Blanc is a savoury, textured Margaret River Sauvignon Blanc in a distinctive, alternative style.

Where many Sauvignons chase green, zesty fruit, this estate bottling is built for complexity and texture, with floral, tropical and earthy layers working together. It is made at the winery Dr Tom Cullity founded in Wilyabrup in 1967, the first in the region, and it reflects the team's interest in savoury, food-friendly whites. Frangipani, feijoa and blackcurrant meet dried shiitake, sandalwood and chicory, and the palate is creamy yet fresh and crunchy, with a light tannic grip and a dry finish reminiscent of pear skin.

Serve chilled but not icy, around 8 to 10 degrees, to let the texture show. Pair it with pork and fennel sausages, grilled asparagus with hollandaise or a goat's cheese salad.
