Spaghetti all’Ascolana (The Olive & Tuna Pasta from Ascoli Piceno)
Ingredients:
- 400g spaghetti (or bucatini)
- 350g tomato passata (or crushed tomatoes)
- 200g quality tuna in olive oil, drained and chopped
- 200g large green olives, preferably Olive Ascolane, pitted
- 4–6 anchovy fillets in oil, chopped
- 2 garlic cloves, lightly crushed
- 1 handful fresh flat-leaf parsley, chopped
- ½ red chilli, finely chopped (or ½ tsp chilli flakes, optional)
- 4–5 tbsp extra virgin olive oil
Instructions:
- Heat the olive oil in a large pan and gently sauté the garlic and chilli until fragrant.
- Add the olives and cook for 2–3 minutes over low heat.
- Stir in the tomato passata and simmer gently for 10 minutes.
- Add the tuna, anchovies and most of the parsley and cook for a further 5–10 minutes.
- Meanwhile, cook the spaghetti in well-salted boiling water until al dente.
- Remove the garlic cloves, then drain the pasta and toss through the sauce.
- Serve immediately with the remaining parsley scattered over the top.
The sweet tomato, briny olives and delicate tuna beautifully complement this Marche Rosato’s bright red berry fruit and refreshing acidity, while its mineral finish echoes the Adriatic coastal character of Spaghetti all’Ascolana, one of the signature pasta dishes of Ascoli Piceno.
