Description
Terres de Pierres, meaning rocky soil, is Verget's Mâcon-Villages, blended from sites on the classic clay-limestone of the southern Mâconnais.
Maison Verget was founded by Jean-Marie Guffens as a négociant business specialising in white Burgundy, buying fruit rather than wine and vinifying it in-house at Sologny. This bottling draws on sources around the communes of Viré-Clessé and Charnay, with a further ten per cent from the shallow, stony Guffens-Heynen terroirs at Pierreclos, which bring a chalky spine to the blend. Only free-run juice is used. The wine is fermented and then matured for four months on its fine lees, with no bâtonnage, in horizontal stainless steel tanks designed to maximise contact between the wine and the lees. It is bottled under screwcap.
Ready on release and best within two or three years; serve at 10-12°C with roast chicken, grilled prawns or a soft goat's cheese.
