Viña Ventisquero Enclave Cabernet Sauvignon 2018

Viña Ventisquero Enclave Cabernet Sauvignon is the Chilean producer's top Cabernet blend, grown in the Alto Maipo.

Ventisquero was founded in 1998 and has grown into one of Chile's more ambitious modern wineries, with vineyards spread from near the coast to the Andes foothills. Enclave comes from Pirque in the Alto Maipo, where alluvial soils and cool air flowing down from the mountains have long produced some of Chile's most structured Cabernets. Cabernet Sauvignon leads, supported by Petit Verdot for firmness, Carménère for softness and spice, and Cabernet Franc for elegance. The result is concentrated and well built, with plum, cherry and cassis, white pepper and damp earth, and firm yet silky tannins.

Decant for an hour and serve at 16 to 18 degrees with a thick-cut sirloin, beef empanadas or slow-roasted lamb. The winery suggests it will cellar for 10 to 15 years.
