Vivera Altrove Terre Siciliane Bianco IGP Organic is a Catarratto and Chardonnay blend from the volcanic slopes of Mount Etna, in Sicily.
Vivera is a certified organic winery based in the Martinella district of Linguaglossa, on the north-eastern flank of Etna. Since taking over the family estate in 2019, Loredana Vivera has continued to farm the property's volcanic vineyards organically, drawing on the mineral-rich black soils that give Etna's wines their distinctive energy. Alongside the mountain's traditional Nerello grapes, the estate grows international and local white varieties, blending them into a wine that speaks to both the volcano's terroir and Sicily's wider winemaking culture.
A bright, mineral-tinged white, it is a versatile match for seafood, antipasti and other lighter, fresh-flavoured dishes.

Caponata Siciliana (Sicilian Eggplant Stew)
Ingredients:
- 2 eggplants, diced
- 1 onion, chopped
- 2 celery stalks, sliced
- 400g canned tomatoes
- 100g green olives, pitted
- 2 tbsp capers
- 3 tbsp red wine vinegar
- 2 tbsp sugar
- 4 tbsp olive oil
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions:
- Fry the diced eggplant in olive oil until golden. Drain excess oil and set aside.
- In a pan, sauté onion and celery, then add olives, capers, and tomatoes. Cook for 10 minutes.
- Return eggplant to the pan, add sugar and vinegar, and simmer for another 10 minutes. Season with salt and pepper.
- Let cool to room temperature, garnish with fresh basil, and serve as a starter or side.
