Vivera Carricante Etna Bianco Organic 2024

Vivera Carricante Etna Bianco is an organic white from the slopes of Mount Etna in Sicily, made from the mountain's native Carricante.

On Etna's north-eastern flank near Linguaglossa, the vines grow on terraces of black volcanic sand and lava several hundred metres up, ripening slowly with big swings between day and night. The estate is certified organic and sticks to local varieties. Carricante, the mountain's main white grape, is high in acid and quiet in aroma, so it gives structure and salinity more than fruit. Mostly stainless steel, with time on fine lees for texture.

Dry, taut and salty, with citrus, green apple and a smoky volcanic edge. Serve at 10–12°C with oysters, grilled fish or Sicilian dishes with anchovy and lemon.
