Voyager Estate Cellar Release Cabernet Sauvignon 2015

Voyager Estate Cellar Release Cabernet Sauvignon is a Margaret River Cabernet held back at the winery and released with age.

Ninety-six per cent Cabernet Sauvignon and four per cent Merlot, the Cabernet hand-picked off Old Block from 1978 and Block 12 from 1995, joined for the first time by clone 125 from Weightman's Block 5, whose younger vines bring energy and lift. The Merlot is Q45-14, a small proportion with a large effect on aromatics and mid-palate flesh. A windy spring and early budburst cut yields in 2015, but a consistently warm summer ripened the tannins properly. Parcels fermented separately in open-top vessels, macerated a further nineteen days, then spent eighteen months in tight-grained French oak, half new, before bottling in 2017.

A decade on, the fruit has turned savoury: blackcurrant with cedar, tobacco and dried herbs, tannins fine and fully resolved. Serve at 17 to 18 degrees, decanted briefly. Slow-roasted lamb shoulder, aged beef or a hard washed cheese will all do it justice.
