Voyager Estate Cellar Release Cabernet Sauvignon 2016

Voyager Estate Cellar Release Cabernet Sauvignon is a Margaret River Cabernet held back at the winery and released with age.

The Cellar Release draws on Voyager's oldest Cabernet plantings, Old Block going in during 1978 and Block 12 in 1995, with a small proportion of Merlot worked through for aromatics and mid-palate flesh. Parcels are fermented separately in open-top vessels and given an extended maceration before maturing in tight-grained French oak, and the wine is then held at the winery for around a decade before it is released. We hold no tech sheet for this release, so the exact blend, oak regime and bottling date are left out rather than filled in.

A decade on, the fruit has turned savoury: blackcurrant with cedar, tobacco and dried herbs, tannins fine and fully resolved. Serve at 17 to 18 degrees, decanted briefly. Slow-roasted lamb shoulder, aged beef or a hard washed cheese will all do it justice.
