Voyager Estate MJW Cabernet Sauvignon 2020

Voyager Estate MJW Cabernet Sauvignon is a certified organic, single-varietal red from Margaret River.

Houghton clone is the reason this tastes the way it does. Carried to Western Australia in the nineteenth century, it crops lightly, ripens small berries and leans towards blackcurrant and cassis instead of leaf and stalk. Both source blocks, planted in 1978 and 1995, sit on stony gravel over clay that lets roots run deep. The 2020 season was warm and dry through spring before a mild January slowed ripening and let phenolics catch up with sugar. Hand-picked fruit was destemmed to keep whole berries, fermented block by block in open-top vats with gentle pump-overs and plunging, then given eighteen months in French oak. Blending and bottling followed in October 2021.

Blackcurrant and dark chocolate over dried bay and graphite, with a long, structured tannin line. Decant and serve at 18 degrees. Match it with slow-roasted lamb shoulder, dry-aged beef or a mature cheddar; there is at least another decade in it.
