Voyager Estate Museum Cabernet Sauvignon 2014

Voyager Estate Museum Cabernet Sauvignon is a cellar-aged Margaret River Cabernet blend released with bottle age.

Museum releases come out of the estate's own cellar after a decade or more, which saves the buyer the waiting. The blend here is 90 per cent Cabernet with 6 per cent Merlot and 4 per cent Petit Verdot, the Cabernet drawn from Old Block, planted 1978, and Block 12 on the North vineyard, planted 1995. Merlot brings flesh and earth, Petit Verdot a floral edge. Hand-picking ran from 25 March to 4 April; bunches were destemmed and sorted to keep berries whole. Small open-top vats, cool ferments and twice-daily plunging preceded up to 21 days on skins, then tight-grained French oak, half of it new, until blending in January 2016.

A decade in bottle has drawn out cedar, tobacco leaf and dried blackcurrant, and the tannins have gone silky. Serve at 18 degrees after a short decant off any sediment. Roast beef, braised oxtail or a plate of hard cheeses will suit it.
