Voyager Estate Project Cane Cut Semillon is a sweet Margaret River dessert wine in a half bottle.
Cane cutting means severing the cordon while the fruit still hangs, so the grapes dehydrate on the vine and concentrate without the help of noble rot. The warm, dry 2018 vintage gave Steve James and his team the conditions to do it properly. Fruit came from two blocks: Estate Block 6, in the ground since 1978, and Cordis Block 6, which followed in 1994. Cordons were severed in early March once flavour had arrived, and hand-picking took place on 23 March. Fermentation took place mostly in stainless steel, with a touch of French oak for spice. Project is the estate's label for one-off experiments.
Citrus marmalade and golden pear on a fresh, clean palate, with honeycomb and a talc-like dustiness behind, and sweetness held in check by acidity. Serve well chilled, around 8 degrees, in small glasses. Lemon tart, panna cotta or a firm blue cheese all work.
