Voyager Estate Project Nouveau Rouge 2020

Voyager Estate Project Nouveau Rouge is a light, early-drinking Cabernet Sauvignon from Margaret River.

The Project label exists so the winemaking team can try things, and this one asks what Cabernet does when treated like Beaujolais. Clone 337 on Ullingers Block 4 supplies the fruit, and it carries less tannin than most Cabernet selections, which is the whole point. The fermenter was built in layers, 30 per cent whole bunches sandwiched between destemmed berries, and the juice spent only seven days on skins before pressing. Fermentation finished in stainless steel, then three months on light lees. Margaret River is better known for serious, structured reds, which makes this a useful reminder of what the variety can do at the other end of the scale.

Sour cherry and aniseed, prickly tannins and a savoury, dry finish. Chill it to 14 degrees and it comes alive. Charcuterie, roast chicken, a mushroom pizza, or anything off a summer barbecue will do, and it is better slightly cold than warm.
